If you are looking for lighter breakfast options, the “egg battered yam” is a good option it is a breakfast delicacy enjoyed by many Nigerians, and a fun fact is it originated from the North and now has gone on to be enjoyed by a lot of people.
INGREDIENTS
- Half Tuber of yam
- Half cup of all-purpose flour
- 1 medium egg
- Half teaspoon curry powder
- Half teaspoon tumeric
- Half teaspoon ginger
- 1 cube stock cube
- Half big onion for flavour
- salt
PREPARING YAMARITA (EGG-COATED FRIED YAM)
- Peel yam, cut into Box-like slices, wash and set aside.
- Sift the flour, put in a bowl and spice with flour with curry powder, ginger, turmeric, stock cube and salt, and set aside.
- Pour the egg into a bowl add salt, and then whisk until it’s foamy.
- Put the washed yam in the pot, add salt, and water, and cook until done.
- Leave the yam to cool, put the yams in the spiced flour, coat it with flour and dip in the whisked egg, then coat with flour again.
- Heat the vegetable oil, add onion, add coated yams, and ensure that all sides of the yams are fried thoroughly.
- Remove from heat, and put in the paper to drain excess oil.
The “egg-battered yam” is quite tasty and can be taken with your favourite beverage during breakfast or fresh juice. It can also be eaten as a late lunch snack, it’s quite easy to prepare especially if this is your first time trying it out. Other simple and easy-to-make side dishes include Akara, Moi moi, Nigerian fish stew, Peppered snail, and Nkwobi.
