Youโ€™re definitely on the right post! Letโ€™s dig in now, shall we?

You should know first that Fried Rice is an agelong Chinese cuisine, a common seafood menu in Asia that has also traveled around the world to become a delicacy with varied preparation processes but the same name. However, whether you are an African or from another part of the world, I will recommend that you get yourself acquainted with this method as well. The dish is prepared with cooked rice, carrots, green beans, sweet corn, and meat all stir-fried together.

INGREDIENTS

(Serving 8 people)

  • 8 cups of Rice.
  • Sliced cabbage.
  • Carrot.
  • Green beans.
  • Half a cup of green peas.
  • Green pepper.
  • Cow Liver (about the size of a manโ€™s palm)
  • Chicken.
  • Vegetable oil.ย 
  • Onions.
  • Curry powderย 
  • Saltย 

PREPARING YOUR FRIED RICE

  • Cut, wash your chicken, and put it in a pot, add a tablespoon of thyme, curry, a pinch of salt, 2 stock cube, and 2 medium-sized onions, then add a little water. Allow it to cook for 10 minutes. Ensure that you put in just enough water to cook your chicken and some left over for your stock.ย 
  • This is optional, but after boiling your meat, you can either fry or grill it.ย 
  • Wash the cow liver and put it in a pot, add a little salt to taste, and a cube of stock. When cooked, cut up the liver into tiny bits.
  • Parboil the rice and sieve out the water.
  • Wash the vegetables, slice the onions, and dice the carrots & pepper.
  • Pour the chicken stock into a large pot, and let it boil. Add the rice, curry powder, garlic powder, onions, and salt. Allow the stock to cook the rice, if itโ€™s not enough, then add a little water.

PS: Ensure to check on the rice at intervals to make sure it does not end up too soft.

  • Pour vegetable oil into the pan, add the carrots, green peas, green bell pepper, and liver, and add some curry and seasoning cube to taste. Stir fry for a minute.ย 
  • In another pan add a little of the vegetable mix, add the rice in batches, then mix and fry batch by batch. Your fried rice is ready.

Serve your Fried rice with some fried or grilled chicken, fresh fruit juice, or any drink of your choice.

Fried rice is popularly eaten during the festive season or special occasions in Nigeria. Other traditional intercontinental dishes you can also try out during festive seasons are Jollof rice, Nigerian rice salad, Roasted Chicken, and Nigerian coconut rice.
