Coconut rice is not occasionally prepared by families, especially in Nigeria, fried rice and jollof rice, and eaten more than this rice, which is mainly due to the added work and effort put in while making this rice. However, it is delicious food that can come in handle on occasions when your pallete is longing for something different. 

INGREDIENTS

• Rice 
• Coconut milk
• Onion 
• Vegetable oil
• Salt
• Tomatoes
• Grounded Habanero peppers
• Green pepper 
• Black pepper

MAKING YOUR NIGERIAN COCONUT RICE

• Boil the rice in water for about 10-15 minutes (This is to parboil it, sieve it out, and set aside) 
• Set a pot on fire and pour in vegetable oil, this depends on the quantity of rice.
• Add your onions and black pepper and stir fry for one minute.
• Cut up your tomatoes into thin strips, add pepper and coconut milk then cook for about 7 minutes (you can add a pinch of salt) 
• Add your rice and leave to cook till done, before the water is dried up add your diced green peppers. 
• Food is served

Coconut rice is very rich in nutrients and is best served for lunch or dinner, with your favorite fruits or drink. Other intercontinental dishes you can try out include Fried rice, Nigerian rice salad, Roasted Chicken, peppered gizzard, and Nigerian coconut.
