Peppered gizzard and plantain is mostly served at high-class parties in Nigeria.
โGizdodoโ as itโs fondly called is a Nigerian local delight, a combination of Gizzard and Plantain an easy recipe to prepare and very delicious. It is made by frying plantain and gizzard in pepper sauce. This recipe is great for dinners because itโs easy and tasty.
INGREDIENTS
- Gizzards
- Ripe Plantains
- Seasoning Cubes
- Salt to Taste
- Chicken stock
- Curry Powderย
- Thymeย
- Green Bell Pepper, Yellow Bell Pepper and Orange bell pepper.
- Tomatoesย
- Vegetable Oilย
- Ground Habanero pepperย
- Onionย
MAKING YOUR PEPPERED GIZZARD AND PLANTAIN
- Wash and clean the Gizzardsย
- Turn on the fire, Place a pot on it, then put the Gizzards inside a cooking Pot and add the onions, 1 seasoning cube, Curry, Thyme, and Salt to taste.ย
- Add water to the same level as the Gizzards and cook for about 40 minutes.
- Heat up the cooking Oil and fry the Gizzards till it turns brown. Remove from Oil and set aside.
- Peel and cut the Plantain into โcube-likeโ pieces, sprinkle with a pinch of salt, and fry till golden brown.
- Pour Cooking Oil into a Pan, and fry the Onions for about till it turns slightly brown.ย Add the diced Tomatoes and ground habanero pepper.ย Fry for 3 to 5 minutes or anywhere in between.ย
- If itโs too thick, add a bit of chicken stock or water to loosen it up. 1 Seasoning Cube, curry powder, thyme, and salt to taste.ย
- Then add the gizzards, the fried plantains, and the diced bell peppers. After stirring thoroughly, simmer for 3 to 5 minutes.
Serve and enjoy as a main dish or as a side to Rice, Spaghetti, or any other meal of your choice. Other dishes to try out includeย Nigerian fish stew, Peppered snail, and Nkwobi, Moi Moi.
